We use a modern wood oven to bake all our products, from bread, pizza, “spianata”, to cakes, cookies and other delicacies. The wood burns in a lateral baking oven without contaminating the baking surface but, at the same time, leaving all its aromas because the fire tongues reach the upper vault.
The construction company, Di Fiore Forni from Cupramarittima, with years of research and experience on their side, has guaranteed a perfect functioning of the oven which so far, using the oven, we have always obtained excellent results because the heating system based on induction allows a homogeneous baking which leaves all the wooden fragrances in the the product.
We have chosen beech wood for burning because of its excellent heating power and the pleasant fragrance.
